Might help to list the company’s you are considering. But as far as rebuild goes. Those are fairly easy to rebuild. I’d assume about any decent shop could get you squared away on that. Especially if it’s a suspension specific shop.

Apparently, the forks on the RR when new had a coating on them that was an improvement on the standard 636 & R model forks, without looking up I think it may have been nitride as you said,Replacing the pitted legs would be more effective than re-plating. Someone somewhere has that stock in hand….. if you wanted to get really fancy have them nitride coated while you’re at it.
