How does the Kawasaki ZX6R perform when compared to cars?

You will reach somewhere near 150MPH indicated on GPS. The speedometer will read higher.
Do you remember about 14 years ago, the Minnesota State Police helicopter chasing an RC51 they claimed hit 150MPH?

OP - the bike is typically quicker than all but the most-exotic supercars, due to a far more favorable HP/mass ratio. Cars, if decently set up, will out-corner and out-brake a bike (but by less than you'd think). Bikes can corner hard, but need a LOT of pavement to commit and clear the turn.

The big advantage we have as sportbike riders: it's a hell of a lot cheaper than some Lotus or Ferrari (or even Ford). No other form of motorsport can the average person get so close to the speeds and equipment of a top-tier (MotoGP/WSBK) team/rider. Or, put differently, Mat Mladin on your bike can compete. You on Mat Mladin's can't. If you don't know who Mladin is, substitute in any other professional racer's name.
 
Fastest I've ever been is ~171 on an '07 GSX-R1000 at Miller Motorcports Park, gps logged and recorded. Here's a grab from a video from that race day at 167, somewhere in this storage folder is the vid with the peak speed but I don't have the time to search for it:

In the graphic overlay, the tach shows MPH, not RPM as I didn't have a logger on the tach back then. You can see I was ~200 RPM into redline on the real tach below the windscreen. This was in 2011. This was 17 June, note the snowcap still on the mountains.
